Temperature-treated Gluten Proteins in Gluten Friendly™ Bread Increase Mucus Production and Gut-barrier Function in Human Intestinal Goblet Cells

We investigated the effects of Gluten Friendly™ bread on mucus production in the intestinal epithelium, and of barrier function in healthy human mucus-secreting goblet cells. Mucus-producing cell monolayers that were exposed to digested Gluten Friendly™ bread, showed a significant increase in MUC2 concentrations. Additionally, we observed significantly higher values for gut barrier function in cell monolayers exposed to digested Gluten Friendly™ bread.
